Today we’d like to introduce you to watertown, ma’s shiraz cuisine.
So let’s start at the beginning – how’d you get into the restaurant business?
Executive Chef/Proprietor Moe Anbardar brings to Shiraz Cuisine 20 years of experience in the hospitality industry. As a native of Tehran, Iran where large family gatherings became the culinary inspiration for Moe, he brings a fresh and innovative style to the kitchen.
At his family home in Tehran, it was not uncommon for guests to be greeted and welcomed by his mother, who ushered them inside and offered refreshments. Later on he has earned his culinary experience under the guidance of some highly seasoned chefs at a number of five-star venues back home in Iran.
Moe has migrated to US when he was in his 20’s and since then has worked very hard in dreams of opening his own establishment and running his own kitchen. Finally in 2008 he found his dream location in Watertown, MA and opened the Shiraz Cuisine.

Moe resides in Watertown, MA with his wife and three children enjoying the simple things in life such as fishing and reading.
What have been the biggest challenges you’ve faced over the years?
It’s been a challenging long way to get to where we are today. My husband and I in spite of all the hardships always tried to provide our customers with good time, delicious meal in a friendly and relaxing atmosphere.
We tried to built our business based on these three factors, which takes a lot of efforts to accomplish!
We also made sure to keep the recipes traditional and that made it hard to advertise the menu. We had to educate our customers.
Another challenge that we face everyday is the fact that our menu is made fresh everyday so we have to do a lot of cooking on a daily bases.
What stands out about shiraz cuisine?
All our dishes are unique and the reason behind that is the spices that we use for each specific dish. The spices might be common to everyone but the secret is the right combination and the timing that they are added to the dish!
What makes our menu a success is that still after all these years Moe does all the marinates himself and oversees the whole process himself everyday!
We do bake our bread in our special tandoori oven in our kitchen and nothing is better than starting a meal with some freshly made bread!
We do make our ice cream in house as well with the unique flavor of saffron!
Last but not least the dishes that are coming out of our kitchen are being made with our heart and love!
