Today we’d like to introduce you to Nohely Chavira-Williams.
Nohely, please share your story with us. How did you get to where you are today?
Opening the restaurant combined something she and her brother Carlos — who handles the business side of Pancho’s — enjoy while also allowing them to share a little bit of Mexico. My brother and I always wanted to open a restaurant special in Dedham since was not a Real Mexican restaurant in this area
“We are coming from a typical Mexican family that loves food and enjoys cooking,” said Williams. “For us, cooking is festive and something that we really enjoy.”
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Very big project but really rewarding. Try to get every permit and license is hard and bring tiles and all the decoration for México as well. We took our time finding the best Mexican products as well
Please tell us about Pancho’s Taqueria.
We are from and raise in Mexico so you can imagine how important it is for us to have a very authentic Mexican food. Our carnitas barbacoa and fish tacos are the real deal.
Do you look back particularly fondly on any memories from childhood?
We are coming from a typical Mexican family that loves food and enjoys cooking “For us, cooking is festive and something that we really enjoy.
Our Sunday’s was a carne asada day and our house was our meeting point. Everyone was welcome and my mom always made the best food. We are a big family 6 kids plus our parents. So everyone cook always something. We all participate and still the same way.
