Meet Marcus Palmer of Great Road Kitchen in Littleton

Today we’d like to introduce you to Marcus Palmer.

Marcus, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
I’ve been in the restaurant business my entire life, it is the only job I’ve ever had. After many years of working for larger corporations such as Morton’s, Legal Sea Foods and Smith and Wollensky as well as several years of working for celebrity and highly acclaimed Chef’s such as Jean-Georges, Todd English, Michael Schlow…I decided it was time to take everything I have learned and start my own restaurant, where we try to bring a taste of ‘big city’ dining and a sophisticated beverage program into the suburbs.

We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
It’s been great! We’ve been well received and very busy from the opening….our guests really enjoy the design, atmosphere, service, drinks and of course the food! The development that we anchor has been very slow in its progress so while we wait for more stores and attractions to open we are enjoying being a free standing restaurant so to speak. But with more stores and a large movie theater on the way we will only get busier and busier!

So let’s switch gears a bit and go into the Great Road Kitchen story. Tell us more about the business.
Great Road Kitchen is an oyster bar and full service contemporary American Restaurant, with a focus on fresh sea food we offer a diverse menu with something for everyone…steaks, chops, pasta, chicken, plenty of fish and menu additions daily. We utilize local farms and fisheries whenever possible…we hate to use the term ‘scratch kitchen’ but we do make almost everything on the menu ourselves. My Business Partner and Chef, Chris Frothingham whom I’ve worked with before with Todd English has been a main stay Chef in the greater Boston area for over 10 years and to have someone as talented as he is behind our food out here in the suburbs is amazing and the guests quickly realized that as we have a large number of regulars who love his cuisine! We have an amazing staff…we treat each other as family and we embrace food and service to make it an integral part of the experience. Our staff love it here and that shows in our service and most guests are surprised by the level of service they receive and we love that! Great food, great service, great times!

Has luck played a meaningful role in your life and business?
Well we were lucky to find this space…it’s a great location. I drive by here often on my way to Boston so I made a call and about 9 months later we had a deal so timing was key…I was in the market for another location and couldn’t have picked a better spot!

In business I have worked very hard, many long hours to get where I am today, and couldn’t be happier with this concept, Chris’s food our staff, our regular guests….it’s great to be in this position.
