Today we’d like to introduce you to Joe Apolaya.
Joe, please share your story with us. How did you get to where you are today?
We officially opened the restaurant in April 2017. We began the process late 2016. Opening a restaurant has always been a dream of my dad. He and a friend opened a small Peruvian rotisserie chicken restaurant in the early 2000’s. Different views on how the restaurant operated lead to my dad selling his half to his friend. If my dad was going to open another restaurant, then it will be in his vision. Luckily, an opportunity opened up on the busy and diverse street of Broadway in Revere. We have been welcomed to the community with open arms.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It hasn’t been exactly a smooth road to open the restaurant itself. We imported a special state of the art rotisserie oven from Peru to provide an authentic experience to our customers. The issue with the oven was the local fire department had never seen an oven like the model we had. It was a long process of getting an approval from the fire department but it eventually came after getting through some obstacles. The delay tested our patience because we were ready to open. Everything worked out in the end but that was tough to deal with at the time.
Sabor Peruvian Fusion – what should we know? What do you guys do best? What sets you apart from the competition?
Sabor is a timeless Peruvian-fusion restaurant that founds itself upon ideals of quality, authenticity and community to provide affordable and hospitable service alongside hearty, innovative cuisine. Utilizing ecologically conscientious equipment and fresh produce, Sabor aims to distribute delicacies that honor the diversity of Peru’s cultural heritage while crafting nourishment with a narrative, food with character. Everything on Sabor’s menu has been crafted with the utmost care to ensure a dining experience with as much charisma and personality as the gastronomically passionate community it serves. At Sabor, our greatest ambition is to create cuisine worth emulating, and an experience without compare.
What moment in your career do you look back most fondly on?
Sabor is most proud of how well the surrounding community has been receptive to us. We love to see fresh faces who want to experience all of what we have to offer. What he cherishes to see is the friendly faces who keep coming back. Sabor takes pride take we our building a fan base and that our dishes are delicious enough for our customers to keep coming back for seconds.
