Meet Jeffrey Abellard of Bistro781 in Waltham

Today we’d like to introduce you to Jeffrey Abellard.

Jeffrey, please share your story with us. How did you get to where you are today?
Born and raised in Waltham, went to Bentley University in Waltham. Home town kid wanted to start a restaurant in his town and make it more than a restaurant, make it be about more than just a place to eat and drink.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
It has not been a smooth road. Failing in my first venture was not easy but taught me a lot. Other hurdles where having people have the same view as myself. Staying true to what I wanted the restaurant to be and not trying to make about other peoples’ opinions and thoughts. Finding the right staff to carry out your message and view is also always a challenge in this business.

Please tell us about Bistro781.
We are a full service, upscale yet casual restaurant. We are an American Style Bistro, which means we serve all types of food from our scratch kitchen. We are known for having a laid back atmosphere, being a good date spot, having good food, good brunch and a friendly staff. What I am most proud of is the care that the people that work with me put into this place. Without them none of this would be even slightly possible. Again, what sets us apart is us trying to be more than just a place you come in to grab a meal and a drink. The care, the community, the presence we try to have is different.

If you had to go back in time and start over, would you have done anything differently?
Staffed differently, trained more, wish we had more time to prepare, but here we are.
