Today we’d like to introduce you to Ilian Tchourilkov.
Ilian, can you briefly walk us through your story – how you started and how you got to where you are today.
We started in the most difficult time for the US economy seen in decades. Back in 2006, after almost a year and a half of renovations, we opened Trio Cafe in Whitman, Ma. For a long time me and my wife Elena were keeping our full time job at Philips Medical at night and working seven days a week in our small Bakery cafe. It was just two of us for a while until we were able to focus entirely on the restaurant business. Few years later after earning great customer base and support our second location in Boston on the Waterfront. We are proud that in less than five years Trio Cafe is in top 20 caterers in Massachusetts second year in a row.
Has it been a smooth road?
Trio Cafe is a family owned and operated establishment named after 3 of us, myself, my wife Elena and our daughter 3 years old at the time, She was sitting quietly on a paint bucket in one of the corners and she was drawing on the wall her child’s scrubles for hours, while we were renovating the entire building. It was a challenge to be capable to support ourselves, make enough to finish the restaurant and being able to succeed in the toughest economy in modern history doing business in a small town community. Trio started with 7 sandwiches, coffee and homemade pastries on the menu and through the years our customers who became friends thought us what to offer and catering options started to appear on the menu. One day Bob, one of the regulars walked in to the shop and after getting his coffee looked me in the eyes and said- Now you are on the map, I’m glad you guys believed in yourself.
That was turning point for us and from this day on we knew we can do it. Then there was a break-in, stolen goods, broken register, windows, doors and missing catering book with all the orders just before a crazy busy weekend in mid-summer. There were about two dozen customers that with the help of the whole community we tracked down and we gathered all orders again. People were stopping by for a meal or coffee and they were leaving behind $5, $10, $20 dollar bills to help us recover faster. Mutual Bank across the street sent us a big check. In 2013 Trio Cafe opened a second location in Boston that drove us to one of the top caterers in Massachusetts

Great food and fair pricing. No coupons, no buy one get one free, no thousands of mail in menus, no email marketing. Everything is word to mouth, hard work and dedication. Homemade soups, pasta dishes, our own marinade for steak, turkey, chicken, we make the pizza dough ourselves and we have the best authentic recipe for croissants and Danishes with top of the line equipment in our Whitman store. Many years in a row Trio is voted number 1 Caterer, Coffee shop, bakery, and place for lunch, best pizza
