Today we’d like to introduce you to Dennis Coite.
So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
My first job was as a dishwasher at a banquet facility within a short bike ride from my house. I attended Fairleigh Dickinson University in Madison, New Jersey, where I obtained a B.S. in Hotel, Restaurant, and Tourism Management. After graduating I spent some time in management with Marriott and Radisson hotels before transitioning to the food side as the dining room manager at a private country club in Chatham, NJ. After mastering my golf swing, a local growing restaurant group, Harvest Restaurants, picked me out and I spent the next five years working with them at several properties. After meeting my wife, we decided to move to Massachusetts which is where I am originally from, in order to be closer to my family. Shortly after arriving I joined up with Marios, one of the owners, and have been helping him since.
Has it been a smooth road?
Certainly the hospitality industry contains struggles. It carries a different lifestyle as work revolves around nights, weekends, and holidays. Many friends that you made in college or high school will eventually stop calling because you are never available. Maintaining a stable relationship with a significant other, unless they are in the business with you, is an enormous challenge.
So let’s switch gears a bit and go into the Sofia Italian Steakhouse story. Tell us more about the business.

How do you think the industry will change over the next decade?
The dining industry is experiencing more and more requests to accommodate allergies or special diets. Creating more menu items in tune with these needs will increase odds of success.
