So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
Our old restaurant, Troquet, was located on Boylston Street for nearly 16 years, directly across from Boston Common. We’ve celebrated 20,000 anniversaries, birthdays, graduations, and theater events with our guests, and made many life-long friends.
In February of 2017, we closed Troquet. We are excited to welcome our guests to our new restaurant, Troquet on South, located in the Leather District, just 5 blocks away from the theaters.
Has it been a smooth road?
Opening any restaurant is a struggle. But try closing one restaurant, and opening a new one – all within four days!
So, as you know, we’re impressed with Troquet on South – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
I am proud of the team that we’ve put together. We have the same crew from our Boylston Street restaurant, including Chef Scott Hebert, and we’ve added new faces, especially on our bar team.
It’s been decades in the making, and I am proud of our wine cellar. We have a 24-page wine book for guests, and 40 wines by the glass. We have been in the Top 100 Wine Restaurants for Wine Enthusiast magazine for the past 8 consecutive years.
Let’s touch on your thoughts about our city – what do you like the most and least?
Boston is a great metropolitan city, and yet small enough that I can still run into friends and family as I travel through the city.
If I could fix one thing – well, as someone that just opened a restaurant, the transparency in the permitting process in Boston has been a difficult road.
