Today we’d like to introduce you to Cecilia Flores.
Cecilia, can you briefly walk us through your story – how you started and how you got to where you are today.
Coco Verde Vegan was born out of a love of bold authentic Latin flavors and a desire to enhance healthy lifestyles for everyone dish by dish. After learning more about plant based diets, I felt inspired to make the transition. This was especially important to me because at the time our daughter, Ivanna, was starting to eat solid foods. I wanted to give her the best start possible and feed her nourishing foods. The only issue was, I couldn’t find many vegan Latino recipes or blogs and as I moved towards a vegan diet, I didn’t want to leave my roots behind. My fiancé, Ivannoe, a classically trained chef, and I have always loved cooking together and so we got cracking and started creating veganized versions of our Latino favorites! I decided to start a blog and share our recipes and experiments for other people who wanted to find vegan Latino food! We’ve grown quickly and in addition to recipes were also offering catering services!
Has it been a smooth road?
It’s been an interesting road! I think with everything, there are ALWAYS ups and downs and it’s always about how you roll with it. For me, I always reach out to my friends and family when I need it! This entire journey has been a learning process: learning how to put together a website, how to take pictures of food, experimenting with ingredients, and more. Every day is a challenge, every day is different. The best thing that we can do is learn and keep moving forward!

Coco Verde Vegan is a Latino Vegan Kitchen that offers catering services, cooking demonstrations, meal planning and more! Our website also includes some our original recipes. We are so proud to be sharing healthier versions of our childhood favorites, especially since plant based diets have been linked to preventing illnesses such as diabetes and heart disease. Everything we do comes from the heart and we hope that people who try our dishes can taste the love that we put in!
Let’s touch on your thoughts about our city – what do you like the most and least?
These two really go hand in hand for me. On the one hand, I really love the diversity of the city and that as a foodie, there are delicious restaurants with dishes from all over the world! On the other hand, gentrification is changing the scope of Boston and is pushing longtime residents, especially low income people of Color, out of the city.
