Meet Carol and Giulio Caperchi of Seven Hills Pasta Co. in Melrose

Today we’d like to introduce you to Carol and Giulio Caperchi.

Carol and Giulio, can you briefly walk us through your story – how you started and how you got to where you are today.
Having a pasta business was always a dream of ours, but it became real when we visited a small pasta machine manufacturer just outside of Rome (where Giulio is from) while we were visiting family a few years back. The craftsmanship of this small company struck a chord with us and definitely impacted our decision to turn our dream into reality. We knew we wanted to be a part of the pasta scene back in Boston. We had initially started our business selling Italian wine crackers called “taralli” which helped us get an idea of the market and food scene. From when we first started selling pasta in August of 2017 we’ve slowly grown from selling at a handful of farmers markets to branching into wholesale, having events at our “pastificio” (pasta kitchen), attending pop-ups and hosting pasta making classes. We owe a lot of that growth to the wonderful Melrose community, especially the folks at the Melrose Farmers Market for spreading the word about us and really welcoming us when we first came into town. Pasta is a simple yet very well-known food product that speaks for itself. It represents family, friends, and bringing people together – that’s exactly what we want to do at Seven Hills Pasta Co.

Has it been a smooth road?
If it were a smooth road it would be boring – so the answer is definitely no, not smooth. There were a few months when we had a new business, a newborn, and a new home all at once and it was slightly overwhelming. Being a married couple and co-owners of a business takes a lot of patience and stamina – and humor, too. Being a small company we wear many hats so it’s always struggle trying to make sure nothing gets missed or forgotten.

So let’s switch gears a bit and go into the Seven Hills Pasta Co. story. Tell us more about the business.
We’re a small batch artisan dried pasta company. Our pasta is simple and made with only 2 ingredients: Semolina Flour + Water. That’s it. We’re proud to be the only boxed dried pasta coming out of the greater Boston area. I think what sets us apart from others is that we’re doing more than just selling pasta (which is totally fine, of course!) – What brings us joy is connecting with folks over good food and bringing community together through food. Food is the universal language and if we can host events and dinners and classes within our community to meet our neighbors and share stories all while making or eating pasta then THAT is what it’s all about.

We hope that when folks shop and see our box of pasta it’s more than just a box of noodles – it’s bringing your family to the table for a delicious, locally made, honest meal.

How do you think the industry will change over the next decade?
Pasta itself is everywhere, on every menu and it’s not going anywhere. That makes us happy. We look forward to expanding our product line in a few different routes. We hope to partner with area schools and foundations to add an educational theme into our brand as well.
