Today we’d like to introduce you to Brighton/Boston’s Twelve Hours.

So let’s start at the beginning – how’d you get into the restaurant business?
I got into the business because I am an Asian, Thai, and I love to eat Asian food, especially noodle. I also dreamed that one day I could have my own place and maybe someday it could be a franchise business.

I graduated with a bachelor degree in restaurant services and hospitality management in Thailand. After graduating I had a chance to work in hotels like JW Marriott and Sheraton the luxury collection, meanwhile, my family also let me run a restaurant business on my day-off. Therefore, I basically have no time for myself, but I think I was very lucky because I have learnt a lot of things from my experiences.

Then, one day I decided to take little break from working, and go back to school to further my education in order to take another step closer to my dream.

I finally got a Master degree in hospitality management at Johnson & Wales University. While, I was there, I wanted to seek out a good noodle or Asian place to eat (There are many good places around here, but most of them are authentic).

My friend and I kept inventing Asian foods in our own style as our hobby because I believed good food doesn’t always have to follow the traditional rules. It became our passion. Later, we decided that we should do what we love most and opened an Asian Fusion Noodle Cafe called Twelve Hours, which located at 559 Washington St, Brighton MA 02135.

Twelve Hours is an Asian Fusion; specialize in noodles from Thai, Vietnamese, Japanese, Korean, and Chinese. However, we also have original Asian dishes for people who still want this style like Pad Thai, Teriyaki Noodle, or Pho Beef.

The name of “Twelve Hours” comes from the length of time it takes to boil our delicious soup broth. We then decided to keep the restaurant open 12 hours a day (11AM – 11PM) to match a name.

What have been the biggest challenges you’ve faced over the years?
Most of customers or people around here always seeking an authentic food to eat, but my challenge is how they will like fusion dishes. So the question is “What can I do to get their attention?” As most of the dishes on my café, my team and I have created on our own way. We were afraid that our food might be too unique to try.

So, my overcome is everything on the menu is carefully prepared as I did some research and give away samples of all the dishes before I put into the menu. For example,
– Blueberry Crab Rangoon,
– Avocado Buns,
– Scallion Pancake Stuff Roll,
– Crispy Wonton Pad Thai,
– Aloha Noodle,
– Red Curry Ramen, or
– Curry Bunker.
Which, turns out that they loved them all.

So in my opinion, good food for me means good presentation, good sense, and perfect taste. I have to make sure that every dish which my team and I have created will get customers’ heart and they will like it 🙂

What stands out about Twelve Hours?
I think the thing that makes our restaurant different from others are many food items that we’re creating are pretty unique and other restaurant does not have it, for example;

Blueberry Crab Rangoon, Scallion Pancake Avocado Rolls, Satay Buns, and etc..

Moreover, our decor and atmosphere gives customers feeling relax, chic, and ambiance as our concept is a cafeteria style.

We do not have any parking space for customers, however, it’s a street parking and luckily that it is super easy to find a space in our neighborhood area.

Happy Hour:
Yes, we do, on a dinner time from 6PM-9PM, as a special for dinner combo add-on, which they will get $4.12 full size on appitizer ($6.12 original price) or a full size drink for only $1.99 ($3.12 original price) to add on to their meal if they’d like to.
