Meet David Fullerton of Acoustic Java

Today we’d like to introduce you to David Fullerton.

David, can you briefly walk us through your story – how you started and how you got to where you are today.
I’ve always loved coffee and books. I used to think I loved books more than coffee. I earned a Humanities Ph.D. and taught English for a few years. But I soon realized it wasn’t so, that I didn’t love books more than coffee. I loved them both equally. Acoustic Java is a coffee roasting company dedicated to the idea of “enlightenment,” where the passions for books and coffee and music go hand-in-hand. Our mission is: “Enlightenment in every cup.” And our motto is: “As music tames the savage beast, coffee civilizes man unkind.”

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
We’ve been roasting specialty coffee in Worcester for more than ten years now, and last year we opened our flagship roastery and tasting room in the historic Whittall Mills Complex next to Holy Cross College. It took longer than we expected to find a suitable home for our second location, but it was worth the wait.

Acoustic Java – what should we know? What do you guys do best? What sets you apart from the competition?
All our coffees are specialty coffees, but our expertise is finding coffees that are both sustainable (fair trade, organic, bird-friendly, rainforest alliance, women producers) and high-scoring. Coffee must earn a score on the cupping table of at least 80 out of 100 points to be considered specialty, and we are looking for the highest scoring sustainable coffees we can find.

These are harder to find than coffees that are simply “sustainable,” since farmers incur additional costs for sustainability certifications and higher scoring coffees can command higher premiums apart from such certifications. We recognize that market forces tend to put sustainability and quality at odds, so we strive to maintain the balance. We are most proud of and grateful for the many strong relationships we’ve developed over the years all along the supply chain.
