Today we’d like to introduce you to Haim Cohen.
Thanks for sharing your story with us Haim. So, let’s start at the beginning and we can move on from there.
Having grown up helping at my father’s restaurant Rami’s, I would say I’ve been a restauranteur from the very beginning. I remember in 2005, my father moved to Vegas temporarily and left me to manage Rami’s at the young age of 19. It was a big responsibility and I experienced many struggles, but it was the most eye-opening and valuable learning experience in my career. Most importantly, it affirmed my desire to follow in my father’s footsteps and open my own restaurant business.
Around 2012, I caught wind of cold pressed juicing which was becoming popular in New York and California. I kept my eye on the development of the trend and by the next year I knew there was a great opportunity to bring this concept to Boston. In 2014, I spent time drafting my business plan and traveling to California to do research and visit different juice bars. Later on, I pitched the Pure Cold Press concept to my father and won his support. We moved quickly from then on and by June 14, 2015, Pure Cold Press opened its doors for the first time and the rest is history.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
There were definitely challenges along the way. Our product offering was not as straightforward as that of Rami’s in the sense that it was a relatively new concept that required a lot of focus on education of staff and customers. On the other hand, we also had to serve customers who were very well-versed so we had to make sure our staff were well prepared to address these customers’ advanced questions and demands.
Please tell us about Pure Cold Press.
We are a company that specializes in juice but also offers a wide selection of healthy food. We take pride in our unique and delicious juice blends that even people new to juicing find enjoyable. For example, our Liquid Gold juice with Echinacea is great for combatting any early-onset of illness and our Blue Dream juice with E3 Live, a blue algae that is the most nutrient dense food known to man. E3 live can only be sourced from the one Klamath Lake in Oregon and we source ours from the only company that sells it in fresh-frozen liquid form.
We wanted Pure Cold Press to be the place where people would want to go to enjoy a healthy meal, regardless of their diet type and health goals. As such, we have a menu that is simple and accessible and has enough variety to please vegetarians, flexitarians, vegans, and even meat-eaters.
