Today we’d like to introduce you to Scott Rothwell.
Scott, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
I started cooking in the United States Navy aboard the USS Saipan, were we were home ported in Norfolk, Va. I was able to travel to a lot of southern towns where I fell in love with the art of BBQ. After my enlistment was up, I took advantage of the GI bill and went to Johnson and Wales University in Providence Rhode Island, where I received degrees in Culinary Arts, Food and Beverage Management. I have loved the business ever since! Working for Corporate Cafe’s in Boston, Cambridge and all over the South Shore. I moonlighted with different catering companies while working full time. Well eventually I decided I can do this better than them and make a few bucks in the process.
Catering Boss was born…….We are currently in our busy BBQ season and have events daily, we specialize in the Pig Roasts or back yard BBQ’S, but we do it all weddings, brunch, buffets you name it. We are always up to the challenge of taking the show on the road. It is a family business and we are just getting our “third generation” going, I have a 5-year-old granddaughter who steals the show every time!
But we have a lot of fun and get to meet so many great people!
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Catering is always a struggle, if you break it down you prepare in a kitchen, pack everything in a van, drive to a faraway location, unload, set up, cook, serve, clean up, breakdown, travel back to kitchen, unload, clean, restore everything. It is an adventure that keeps me hopping so ya it takes, luck, hard work, more hard work, patience, love for the craft, and most important having a dedicated team of professionals on your side.
Struggles come and go, if you are determined and persistent you will overcome.
Catering Boss – what should we know? What do you guys do best? What sets you apart from the competition?
We are a full-service catering company that operates out of a commercial kitchen in Carver, Ma. We have a very busy BBQ season that goes from May- October, then we move indoors with Weddings, Holiday Work Parties. We specialize in Pig Roasts, They are more of entertainment than the main course! People get such a kick out of seeing the entire Pig being cooked, carved and served. Pig preparation and cook time takes a lot of work to get it timed just right, some days we are roasting 3 pigs in a day, and cook times can vary from 4 -12 hours. Customer service and guest interaction is what sets us apart, I love to talk to each customer and make them happy.
What is “success” or “successful” for you?
Well growing top line sales year after year is always a good one, But I think it is the journey how you arrive there. To be able to refine your operations to run like a machine, so you can deliver an excellent event every time.
