Meet Dave Werthman of The Bancroft in Burlington

Today we’d like to introduce you to Dave Werthman.

Before joining the Bancroft, Dave was a mainstay of the Boston bar scene for over a decade, working for years as the Bar Manager of cult favorite West Side Lounge in Cambridge before moving on to be the Beverage Director of The Sinclair in Harvard Square. He believes in a well-rounded approach to cocktails that combines warm hospitality with a commitment to excellence.

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Presenting an intense beverage program in the suburbs has definitely been a challenge, but a good challenge, introducing our guests to unusual liquors and spirits and combining tastes that they might not think would go together.

Alright – so let’s talk business. Tell us about The Bancroft – what should we know?
We are a steakhouse and lounge, known for our phenomenal steaks, composed dishes, unique beverage and cocktail program, and our sexy, swanky decor.

Our bar program is expansive utilizing unique and lesser known artisanal spirits. Our cocktails are seasonally appropriate and we make our own syrups, shrubs, and tinctures.

Is there a characteristic or quality that you feel is essential to success?
Stepping outside the box and creating a unique but outstanding experience for the guest.
