Today we’d like to introduce you to Shawn and Edward Wilson.
Shed’s, run by the sister/brother team, Shawn & Edward, was built with their Texas upbringing in San Antonio, TX. Growing up eating Texas style BBQ with classic recipes from their Memmie (grandmother) was one of their fondest memories of back home and family. And while they love living in Boston and have made it their home, they really missed the low and slow style of dry rubbed smoked BBQ and classic countrysides. So they came together (SH from Shawn and ED from Edward) and SHEDs was born.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Our biggest challenge was really starting over with a new brand. We have owned and operated Viga since 1999, and people in Boston have really embraced us and our store. With Shed’s, we had to start all over again to build awareness. And while we are in the heart of downtown, we are on a small cut through the street, so people really do have to know where we are and seek us out.
We were featured on Phantom Gourmet a few weeks back and we heard many times since “We had no idea you were here!”
Alright – so let’s talk business. Tell us about Sheds BBQ – what should we know?
Bringing Texas Style BBQ to Boston was the first goal. The second was to make it the best BBQ in Boston. In order to do that, we started with the ingredients. Everything is made fresh, in the store. From smoking the meats to baking the cornbread and everything in between, quality ingredients made fresh is the foundation of the brand. The next part was selecting the meats. All of our meats are local sources, all natural and antibiotic free. They are delivered fresh and never frozen, to ensure the most tender and delicious product.
After that, we thought about the experience. Boston is a much faster pace than Texas. So we wanted people to be able to get delicious BBQ at Boston’s pace. So we created a cafeteria-style restaurant that allows people to get their food quickly. If they have to run, they can carry out, and if they have a bit more time, they are welcome to dine with us in our 50 people dining area.
We like to keep it lively in our restaurant, so the music is always cranking, the staff are laughing and it is not abnormal to hear the cowbell ring with a YEE HAW! That’s how we welcome new customers. The last thing to consider was how to take our show on the road. We have a great catering menu that features our traditional menu and then we have menus that turn it up a notch. we have catered tailgate parties, homecomings, corporate events and even weddings!
Shed’s is part of Viga Ventures, the company that owns and operates Viga Italian Eatery and Caterer. We are also active members of the DTX Association and you can see us at all of their events.
