Meet Karol LeBrun of Karol’s Corner Take-Out

Today we’d like to introduce you to Karol LeBrun.

Karol, please share your story with us. How did you get to where you are today?
Born in Costa Rica, I was 1 of 4 children to move to the United States. Cooking was instilled in my daily life from a very young age. Being the daughter of a WWII Veteran, the chef in the Navy and the Latin influence from my mother molded me to what I am today. With over 25 years in the culinary arts and restaurant business, I am able to put all my experiences and open my own little place. The biggest push I had to move forward and open my own place was the loss of my best friend & maid of honor, to Leukemia. Life is too short. Humble and blessed, I now bring my love of the kitchen and share the love of food with everyone.

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It’s a roller-coaster of emotions! My heart belongs to the community to help others. From my first “unofficial” day we opened to now we have had its ups and downs. My first day open was for the officers of law enforcement for free water and soda, air-conditioned room, and restrooms. They were all waiting in a 2-mile line on both sides of the road on their motorcycles in the blistering hot sun to wait to salute one of their own fallen heroes. It was the services of Officer Ronald Tarentino. Since then, learning along the way what works and what doesn’t work is a great experience.

Please tell us about Karol’s Corner Take-Out.
Located in Rochdale, MA, a little town in Leicester, Karol’s Corner Take-Out offers custom homemade family healthy meals to take home and enjoy. Our regular menu features homemade soups, sandwiches, burgers, salads, and entrees using only the best meats, local produce, and dairy products. What sets us apart from other places in the area is that we offer daily specials with a twist. A monthly calendar is featured at the first of the month which offers a little bit of Latin, Polish, and all American flare of ingredients. From our unique gourmet pizza Mondays, wrap of the week or our featured burger, there is something here for everyone. We also bake our pies and cakes for special occasions. And Ice cream, shakes, floats, and sundaes are available all year long.

Do you look back particularly fondly on any memories from childhood?
Thanksgiving and Christmas Dinners… my parents were the best chefs in the world
