Meet Chandrika Patel of Pizza & Sub Stop in Lowell

Today we’d like to introduce you to Chandrika Patel.

Chandrika, please share your story with us. How did you get to where you are today?
I was in a depression for 30 years because of childhood trauma and I quit my medical profession and started healing with meditation. Being a mom started variety of healthy world food for my two kids and noticed that food and cooking worked as a therapeutic remedy for my depression…Being born and raised as a vegetarian. I was always curious about cooking variety of the dishes at home but when we started this business
we were only doing casual American cuisine with all homemade pizzas, breads and sauces.

Being an owner of this business, I put some of my own recipes in the restaurant for vegetarian and vegan people…I started making my own vegan cheese and vegan bread which was really appreciated by vegan customers which motivated me starting full menu for vegan and vegetarian customers. So my restaurant does pretty much everything for everyone which includes chicken, steaks, sides, gluten free, spicy and vegan. These categories also include sweet and savory street foods of India and variety of pizzas and vegan macaroni.

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Business is doing good but as an E2 visa holder we face the same ups and downs as a legal alien as other non-immigrants face…before two years ago we were denied renewal of our visa and we had to leave the country and we had to take new visa and those 4 months of frustration has significantly impacted our business but I am a fighter and no situation in life has taken away my strength of fighting and by working hard I brought up my business back and its doing great and growing every year…But there is a constant fear in my mind related to my visa and that is a big hurdle for expanding my another branch of C’s Vegan and Vegetarian Gurukul.

Alright – so let’s talk business. Tell us about Pizza & Sub Stop – what should we know?
I am a chef and owner of my company. We are specialized in vegetarian, non-vegetarian, gluten free and vegan cuisine. We experiment with the variety of world cuisines.

We prepare everything here in my store from the scratch including pizzas, breads, sauces, and vegan cheeses.

Also my gluten free and zero grain pizzas are prepared without xanthan gum.

I am very proud of my vegan cheeses.

My restaurant has options for everyone and I guess my huge extensive menu makes me apart from others.

Is there a characteristic or quality that you feel is essential to success?
Everything made in the house, fresh ingredients and great customer service…
